Natamycin is white crystalline powder with no taste, which is a high performance and natural inhibitor of leaf mold, microzyme and epiphyte for food and pharmaceutical industry. It is used to protect cheese, meat, juice, canned food, jelly, fruit drink, baked products, instant food, moon cake, kuchen and pickle from mold and yeast growth. Natamycin is fined from Streptomyces natalensis through deep ferments and extracting step by step.
Natamycin is currently approved by the FDA for use on the surface of cuts and slices of cheese where the standards for such cheese provides for the use of safe and suitable mold inhibiting ingredients. Natamycin may be applied to cheese by dipping or by spraying a liquid solution that contains 200 to 300 parts per ppm of the additive (refer to FDA 172.155, 2000).
Europe has used natamycin for decades and has currently implemented a new European Union directive that authorizes the EU member states to create national laws allowing only for the treatment of hard, semi-hard, and semi-soft cheeses with nanamycin.
